Toms’ Boat Bread

“Tom’s Boat Bread” – 04DEC2011

Ingredients:

Unbleached flour, or
½ Unbleached flour & ½ Regular flour, or
½ Unbleached flour & ½ Whole wheat flour
1 pack yeast
½ cup wheat germ
¼ to ½ cup sour cream
1 tsp. baking soda
2 Tbl. spoons sugar

The day before:

Mix 4 cups of flour mix / with 3 cups of warm water. Mix 1 pack of yeast w/ 1 cup of warm water and stir into flour mix. Cover with towel and set aside in warm place for 12 / 24 hours.

Next Day:

Add ¼ to ½ cup of sour cream to ½ cup of wheat germ and stir. Mix together 1 tsp. baking soda w/ 2 Tbl. spoons sugar and stir into sour cream mixture then stir this into the bread dough. Stir in additional flour until the dough becomes too stiff to stir with a spoon. Turn out onto a floured board and knead in more flour until smooth / moist / and satiny; (knead between 60 – 80 times / don’t exceed 80 times)

Divide dough, fold over and seal bottoms & put into 2 bread pans.  Score tops, cover, and let rise. (about 2hrs).

Bake @ 350 degrees for 30 to 40 min, until loaves brown on top and pull awayfrom sides of the pans.  When thumped on the top they should sound hollow when done.
